Investigation of the antioxidant activity dynamic of the mint water extract by electrochemical methods

Abstract

In the present work the total content of antioxidants and their activity relatively oxygen and its radicals are measured in water extract of mint peppery (Mentha piperita L.) by two electrochemical methods: ammetric and voltammetric. It is established that these parameters, and also voltammogramms, defining mechanism of oxygen reduction, are essentially changed during the first hours after extraction. The explanation of the received results from the point of view of mint structure is offered.
